#Juneathon Day 7 – Something Useful, For a Change… A Recipe!

Seven days in to #Juneathon, I thought I would share the recipe I made for Mrs Trenthamfolk on Day 5. It is a personalised version of something we found in a cook book, containing a great balance of protein, carbs and vegetable goodness. Mostly though, it tastes absolutely delicious…

This recipe is perfect for after a longer run, and is a real pick me up. It makes enough to serve up a hearty meal for two, with enough left over for a child (or for a lunch the following day – It tastes just as good re-heated!).

Moroccan Chicken with Couscous

Ingredients

2 tsp turmeric
1 tbsp hot curry powder (Use mild for a ‘warm’ flavour)
Pinch of sea salt
8 boneless chicken thighs
Low Calorie cooking spray
1 onion, peeled and finely chopped
2 garlic cloves, crushed
2cm piece of fresh root ginger, peeled and grated
500ml chicken stock
300g tender stem broccoli
A handful of green beans
300g small vine ripened tomatoes
Zest & huice of 1 lemon
A handful of fresh coriander, chopped
200g raw couscous

1) Trim the chicken thighs of all visible fat, and chop into bite sized pieces. Mix half the spices together and use to coat the chicken. Leave the coated meat to rest for about half an hour.

2) Stir fry the chicken for a few minutes with low calorie cooking spray, until part cooked through. Add a little water if necessary. Add the onions, garlic and ginger and turn down heat. Fry/sweat the mixture for 8-10 minutes. Add the rest of the spices and cook for another minute.

3) Add the vegetables and the chicken stock, put the lid on the pan and bring to the boil, then reduce the heat and simmer for half an hour or until the chicken and vegetables are cooked through.

4) Turn off the heat, add the lemon juice, half the zest and all the couscous to the mixture, with enough boiling water to cover the lot (if necessary). Put the lid on the pan and leave for ten minutes until the couscous is tender. Fluff through with a fork, and serve with the chopped coriander sprinkled on top. Mmmm….

Today was going to be a late one. I was waiting till after the heat of the day to get a #Juneathon run in, however my running buddy bailed on me after she was ‘mugged’ by a bottle of wine. Poor girl. I had plenty of chores to do when I got home from work, so I got them out of the way and hit the road for a quick 3.75 mile loop (#Runkeeper). It was hot and horrible, and I feel like I’ve earned my supper… Burgers tonight!
